Fire Engine Red Strawberry Rhubarb Cobbler

Ingredients:

  • Dough:
  • 4 tablespoons sugar
  • 1-1/2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons cream cheese
  • 1 teaspoon kosher salt
  • 1/4 cup yellow cornmeal
  • 1 cup heavy cream
  • 3 tablespoons butter
  • Filling:
  • 2 lbs strawberries, not frozen. Cut each strawberry in half
  • 4 sticks rhubarb. Cut rhubarb in 3/4 to 1" peices
  • 4 tablespoons butter
  • 1/2 cup sugar
  • 1 tablespoon lemon juice

Directions:

To make topping:

Mix dry ingredients. Cut butter into small pieces and mash into ingredients. Small clumps of butter in ingredients are fine. Add cream cheese and enough cream to make moisten ingredients but not make it to smooth. Ingredients will be very thick.

To make filling:

In saucepan, melt butter and add sugar. Stir a couple times till the sugar dissolves. Mix well in fruit so that the fruit is coated.

To bake:

Spray 9" x 13" pan and place fruit in pan. Spoon dough on top of fruit. Don't worry if the fruit isn't all covered or the batter isn't perfectly spread. Dot the top of the dish with small pieces of butter. Sprinkle cinnamon on top of this and then sprinkle sugar on top. Be generous with the butter and sugar! Bake in preheated oven at 350°F for approx 50 minutes.
