White Chocolate Mousse
White Chocolate Mousse
Ingredients:
- 1 cup good quality white chocolate chips
(I buy them from the bulk food section of WinCo Foods) - 1/4 cup fat free half and half (Trader Joe's)
- 2 cups chilled heavy whipping cream
- 1/3 cup lemon curd (Trader Joe's) for a special,
light lemon flavor if desired. This is particularly
nice if you are serving the White Mousse - Additional raspberries for garnish
Directions:
Combine white chocolate and the half and half in the top of a double boiler set over simmering water. Stir until white chocolate melts and mixture is smooth. Remove top of double boiler from over water; cool for about 5 minutes.
* If you would like, stir the lemon curd into melted chocolate mixture.
Beat whipping cream in another large bowl until stiff peaks form. Gently fold whipped cream into chocolate mixture. Cover and chill until mousse is set, about 2 hours.
Makes 8 servings if you use it as a base for a parfait layered with frnit, or 12-14 servings if used as a piped or spooned topping on dark chocolate mousse, lemon cheesecake, dark chocolate cake or any other dessert that you'd like to make your party's show stopper!
