Roasted Yukon Gold Potatoes with Herbs

Ingredients:

  • 3/4 lb of small Yukon gold potatoes
  • Olive oil
  • Salt
  • Whole garlic cloves (with skins)
  • Fresh rosemary, thyme and sage

Directions:

Preheat oven to 425°F.

Cut the potatoes into uniform pieces. Wash with olive oil and sprinkle with salt. Place the potatoes cut side down with the whole garlic and herbs and roast for 20 minutes. Check every 5 minutes and turn the potatoes as necessary to avoid scorching.
