Bitter Salad Greens with Creamy Vinaigrette

Ingredients:

  • 1 qt washed and dried bitter greens (escarole, endive, radicchio)
  • 4 tablespoons olive oil
  • 1 tablespoon vinegar (red or white)
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon sour cream
  • Salt, pepper to taste

Directions:

Combine all ingredients in a sealed jar and shake vigorously for 1 minute.
