Bitter Salad Greens with Creamy Vinaigrette
Ingredients:
- 1 qt washed and dried bitter greens (escarole, endive, radicchio)
- 4 tablespoons olive oil
- 1 tablespoon vinegar (red or white)
- 1/2 teaspoon Dijon mustard
- 1 teaspoon sour cream
- Salt, pepper to taste
Directions:
Combine all ingredients in a sealed jar and shake vigorously for 1 minute.
